This nutrition education course has been developed for you, the educators of elementary school-age children. It is intended to make you more aware of your role as a nutrition teacher, as well as to increase your interest and ability in conducting nutrition activities in your teaching situation.

Objectives:

  1. Provide you with up- to-date information on nutrition topics and current nutrition issues relevant to school age children.
  2. Demonstrate creative activities that you can use to teach nutrition concepts appropriate to elementary school students
  3. Provide you with ideas, materials, and resources that can be easily adapted to your teaching situation.

The course includes 10 30-min. instructional videotape programs. Each program discusses a specific topic and demonstrates creative activities that communicate nutrition information to school- age children. Each program provides a basis for more thorough investigation of the subject and related issues that are examined in the lesson assignments. Demonstrated activities are intended to be used as a springboard for other activities and methods you can use to reinforce your lesson. Each activity is a simulated classroom experience. Small groups of students are frequently used to give you a closer view of the interaction and discussion generated in these experiences. It is hoped that you will recognize that these activities are also adaptable for larger groups of students. This self-instructional manual has been prepared to complement the videotapes. It is intended to enhance your learning about nutrition and encourage you to implement nutrition-related activities in your classroom setting. Each Lesson corresponds with the videotape presentation and is divided into sections as follows:
